I'm planning to give each part of the animal a monetary value (values to suit the ability of the child), and ask them to work out how much each would cost. A challenge activity would be to give them a selection of animal parts (which sounds a bit gruesome!) and a budget and see what weird and wonderful animals they can make. I'm sure they'd love to be mad scientists for a while!
